Ingredients

  • 2 cups white sugar
  • ½ cup water
  • ½ tsp red food coloring
  • 2 Tbsp lemon juice

Instructions

  1. Prepare a large bowl of salted water. Peel the apples and use a melon baller to scoop out ball shapes. Place the apple balls in the salted water to prevent browning.
  2. Pat dry the apple balls and place them on parchment paper. Insert lollipop sticks into each ball and freeze for 15 minutes.
  3. In a medium saucepan, combine sugar, water, food coloring, and lemon juice over medium-high heat. Bring to a boil, then reduce heat until it reaches 300-310°F (hard crack stage).
  4. Dip each chilled apple ball into the hot candy mixture quickly and place on parchment paper to set. Freeze for a few more minutes until fully hardened.
