Ingredients
- 3/4 pound lean ground beef
- 1 medium onion, diced
- 1 egg
- 1 cup panko bread crumbs
- 1 cup milk
- Salt & pepper
- 8 slices turkey bacon
Instructions
- In a mixing bowl, combine ground beef, diced onion, egg, panko bread crumbs, salt & pepper, and milk. Mix until fully incorporated.
- Divide the mixture into 8 equal portions and shape each into a mini loaf on a baking sheet.
- Cut turkey bacon slices in half and arrange each half in a crisscross pattern over the meatloafs. Tuck the ends underneath.
- Preheat oven to 350°F (175°C) and bake for approximately 50 minutes. For crispier bacon, broil for the last few minutes while watching closely.
