- 2 cups mixed dried fruits (raisins, cranberries, apricots)
- 1 cup chopped nuts (walnuts, pecans)
- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1/2 cup orange juice
- 1/4 cup apple juice
Instructions
- Prepare your workspace by assembling all ingredients and preheating your oven to 325°F (160°C).
- Soften butter at room temperature. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
- Gradually add eggs one at a time, mixing well after each addition.
- In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually combine the dry ingredients with the wet mixture while alternating with orange juice until just blended.
- Fold in mixed dried fruits and chopped nuts gently.
- Grease and line a 9×5-inch loaf pan with parchment paper. Pour batter into the prepared pan and smooth the top.
- Bake for 60–75 minutes or until a toothpick inserted in the center comes out clean.
