Ingredients
- 3 & 1/2 cups Biscoff cookie crumbs
- 1/4 cup brown sugar
- 12 tablespoons unsalted butter, melted
- 2 blocks cream cheese, at room temperature (16 oz total)
- 3/4 cup powdered sugar
- 1 cup Biscoff creamy cookie butter
- 1 teaspoon pure vanilla extract
- 1 & 1/2 cups heavy whipping cream, cold
- Additional crushed Biscoff cookies for garnish
Instructions
- Prepare the crust by mixing Biscoff cookie crumbs, brown sugar, and melted butter. Press two-thirds into a springform pan and refrigerate.
- Beat cream cheese and powdered sugar until smooth, then mix in cookie butter and vanilla.
- Gradually add cold heavy cream while mixing, then whip until thick.
- Layer half of the filling over the crust, sprinkle remaining crumb mix on top, and add the rest of the filling.
- Chill for at least six hours or overnight before serving.
