- 14 graham cracker sheets (or 1 1/2 cups graham cracker crumbs)
- 8 Tbsp butter, melted
- 1 cup fresh cranberries
- 8 oz cream cheese, softened
- 1 1/2 cups heavy whipping cream
- 2 Tbsp fresh orange juice
- 2 tsp orange zest
- 1/3 cup powdered sugar
- 2 Tbsp granulated sugar
- 1 tsp vanilla extract
- Optional: orange zest, sugared cranberries, candied orange peels
Instructions
- Prepare the crust by pulsing graham crackers in a food processor and mixing with melted butter, sugar, and vanilla until combined. Press into a deep dish pie plate.
- For the cranberry filling, heat cranberries and orange juice in a saucepan until boiling. Stir in sugar, zest, and vanilla; simmer until thickened. Let cool.
- Whip heavy cream until soft peaks form; add orange juice, zest, powdered sugar, and vanilla. Fold half into the cooled cranberry mixture.
- Spread cranberry filling over the crust; top with remaining whipped cream.
- Chill for at least 4 hours before garnishing with optional toppings like orange zest or sugared cranberries.
