- 3/4 cup softened butter
- 1 and 1/2 cups brown sugar
- 1 large egg
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 3/4 teaspoon baking powder
- 3/4 teaspoon kosher salt
- 1 cup old fashioned rolled oats
- 1 and 1/4 cups old fashioned rolled oats (blended into powder)
- 2 and 1/2 cups semisweet chocolate chips
Instructions
- Preheat oven to 325°F. Line baking sheets with parchment paper.
- In a large bowl, beat butter until creamy. Add brown sugar and continue mixing until fluffy.
- Incorporate the egg, egg yolk, and vanilla extract; mix until combined.
- Gradually add flour, baking soda, baking powder, and salt; stir until just combined.
- Fold in both whole oats and blended oats until no flour streaks remain.
- Gently mix in chocolate chips.
- Scoop dough onto prepared baking sheets and bake for about 10-12 minutes or until edges are lightly golden.
