  • 2 pounds ground beef
  • 1 cup panko bread crumbs
  • 1 cup milk
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tablespoon Worcestershire sauce (non-alcoholic)
  • 1/2 cup ketchup
  • 1 tablespoon brown sugar
  • 1 tablespoon spicy brown mustard
  • 1/2 teaspoon dried thyme (can use less or replace with 1 Tbsp fresh thyme)
  • 1 teaspoon kosher salt
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, soak the panko bread crumbs in milk.
  3. Sauté diced onions in butter until fragrant, then add minced garlic.
  4. In a large bowl, combine ground beef, soaked breadcrumbs, sautéed onions and garlic, egg, Worcestershire sauce, thyme, and salt. Mix gently and shape into a loaf on the baking sheet.
  5. Bake uncovered for about 40 minutes. Meanwhile, mix ketchup, brown sugar, and mustard in a separate bowl.
  6. After 40 minutes, spread the sauce over the meatloaf and bake for an additional 30-35 minutes until it reaches an internal temperature of 160°F (70°C).
