- 1 tablespoon olive oil
- 12 ounces chicken sausage (sliced)
- 1 medium onion (diced)
- 1 medium green bell pepper (diced)
- 1 medium red bell pepper (diced)
- 2 celery stalks (diced)
- 3 cloves garlic (minced)
- 1 1/2 cups long-grain white rice
- 2 teaspoons Cajun seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper (optional)
- 3 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes (optional)
- 1 pound shrimp (peeled and deveined)
- 2 green onions (chopped, for garnish)
- Fresh parsley (chopped, for garnish)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced chicken sausage and cook until browned.
- Stir in diced onion, green bell pepper, red bell pepper, celery, and minced garlic; cook until tender.
- Sprinkle Cajun seasoning, smoked paprika, salt, and pepper over the mixture; stir well. Add long-grain white rice and mix until coated with spices.
- Pour in chicken broth and diced tomatoes (if using). Bring to a boil, then reduce heat to low.
- Cover and simmer for about 25 minutes until rice is tender. After 20 minutes, place peeled shrimp on top of the rice without stirring; cover again until shrimp are pink.
- Fluff rice gently with a fork; garnish with chopped green onions and fresh parsley before serving.
