  • 1 can (14.5 ounces) diced tomatoes (optional)
  • 1 pound shrimp (peeled and deveined)
  • 2 green onions (chopped, for garnish)
  • Fresh parsley (chopped, for garnish)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced chicken sausage and cook until browned.
  2. Stir in diced onion, green bell pepper, red bell pepper, celery, and minced garlic; cook until tender.
  3. Sprinkle Cajun seasoning, smoked paprika, salt, and pepper over the mixture; stir well. Add long-grain white rice and mix until coated with spices.
  4. Pour in chicken broth and diced tomatoes (if using). Bring to a boil, then reduce heat to low.
  5. Cover and simmer for about 25 minutes until rice is tender. After 20 minutes, place peeled shrimp on top of the rice without stirring; cover again until shrimp are pink.
  6. Fluff rice gently with a fork; garnish with chopped green onions and fresh parsley before serving.
