Ingredients
- 6 boneless, skinless chicken breasts
- 1 cup prepared barbecue sauce
- 2 teaspoons orange zest
- 2 teaspoons fresh grated ginger
- 1 can (20 oz) pineapple slices in juice (drained)
- ½ cup reserved pineapple juice
- Optional: 1 tablespoon dark brown sugar
- Garnish: Fresh parsley
Instructions
- In a mixing bowl, combine barbecue sauce, orange zest, grated ginger, and reserved pineapple juice. If desired, add brown sugar. Set aside half for later.
- Preheat grill to 350° – 400°F. Oil the grates using paper towels dipped in cooking oil.
- Grill chicken breasts for 8-10 minutes per side, basting with marinade until cooked through and juices run clear.
- Grill pineapple slices until lightly charred.
- Serve grilled chicken with pineapple slices and drizzle remaining sauce over the top.
