- 1 cup pitted dates, chopped
- 1 cup boiling water
- 1 tsp baking soda
- 1/2 cup unsalted butter, softened
- 3/4 cup light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- Zest of 2 oranges
- 1/2 cup fresh orange juice
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp ground cardamom
- 1/4 tsp salt
- 1/4 cup honey
- 1 tbsp fresh orange juice
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch cake tin.
- In a bowl, whisk together all-purpose flour, baking powder, ground cardamom, and salt.
- Cream softened butter and brown sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, orange zest, and fresh orange juice until combined.
- Fold in the chopped dates until evenly distributed.
- Gradually add the dry ingredient mixture into the wet mixture, stirring gently until just combined.
- Pour the batter into the prepared tin and bake for about 40–45 minutes or until a toothpick comes out clean.
- For the honey drizzle, warm honey and fresh orange juice in a saucepan until smooth.
- Once baked, let cool slightly before drizzling with the honey mixture and allow cooling completely before serving.
