  • 3/4 cup cornstarch
  • 1/3 cup all-purpose flour
  • 1/2 cup white distilled vinegar
  • 1/2 cup cane sugar
  • 1/4 cup water
  • 1/4 cup soy sauce or coconut liquid aminos
  • 1 Tbsp orange juice concentrate
  • 1/2 tsp crushed red pepper flakes
  • 2 cloves garlic (crushed)
  • 1/2 tsp zested ginger root (peeled)
  • 1 Tbsp cornstarch
  • 1 tsp sesame oil
  • 1 tsp rice apple vinegar or apple cider vinegar

Instructions

  1. Cut the chicken into bite-sized pieces. In a bowl, whisk together the egg, sunflower oil, salt, and pepper. Gradually add cornstarch and flour until a thick batter forms.
  2. Heat oil in a frying pan or deep fryer over medium-high heat.
  3. Coat each chicken piece in batter and fry until golden brown (5–7 minutes). Drain on paper towels.
  4. To prepare the sauce, mix vinegar, sugar, water, soy sauce, crushed red pepper flakes, garlic, ginger, orange juice concentrate, cornstarch, sesame oil, and apple cider vinegar until smooth.
  5. Combine fried chicken with the orange sauce in a skillet over low heat for an additional 2–3 minutes until heated through.
