- 1 1/2 pounds potatoes, diced

- 10 ounces Mexican chicken sausage
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Boil the diced potatoes in a medium saucepan covered with water until tender, about 5-8 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add the diced onion and sauté until softened, about 5 minutes.
- Stir in the chicken sausage, breaking it into smaller chunks, and cook until fully cooked through (8-10 minutes).
- Add the boiled potatoes to the skillet, mixing well with the sausage and onion. Cook for an additional 5 minutes.
- Season with salt and pepper to taste, then garnish with chopped cilantro before serving.
