Ingredients
- 16 ounces rotini pasta
- 1 medium cucumber (chopped)
- 1 pint grape tomatoes (halved)
- 1 small bell pepper (chopped)
- ¼ cup finely diced red onion
- 1 cup Italian dressing
- ⅔ cup crumbled feta cheese
- ¼ cup sliced black olives
- 3 tablespoons chopped fresh parsley
- Salt and black pepper (to taste)
Instructions
- Boil a large pot of salted water. Add rotini and cook until al dente according to package instructions. Drain and rinse under cold water.
- While pasta cools, chop the vegetables: cucumber, grape tomatoes, bell pepper, and red onion.
- In a large mixing bowl, combine cooled pasta and chopped vegetables. Add Italian dressing, feta cheese, olives, parsley, salt, and pepper.
- Toss gently until everything is well mixed. Chill for at least one hour before serving for enhanced flavors.
