Ingredients
- 1 box (3 oz) blueberry-flavored Jell-O
- 1 box (3 oz) cherry-flavored Jell-O
- 1 envelope unflavored vegan gelatin
- 1 cup milk, divided
- 3 tablespoons granulated sugar
- 1/2 teaspoon pure vanilla extract
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Make the Blue Layer: In a bowl, dissolve blueberry Jell-O in 1/2 cup boiling water. Stir in 1/2 cup cold water and let cool.
- Make the Red Layer: In another bowl, dissolve cherry Jell-O in 1/2 cup boiling water. Stir in 1/2 cup cold water and let cool.
- Prepare the White Layer: Sprinkle vegan gelatin over 1/4 cup cold milk and let it bloom for 1 minute. Heat the remaining milk until simmering, then stir in sugar and vanilla. Combine with bloomed gelatin until dissolved.
- Assemble Layers: Lightly spray plastic cups with nonstick spray. Spoon blue Jell-O into cups and refrigerate until set (15 minutes). Add white layer and refrigerate again (10 minutes), followed by red layer. Chill for at least 2 hours.
- Serve chilled for a refreshing treat.
