Ingredients
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup sour cream
- ½ cup all-purpose flour
- 2 cups fresh or canned peaches, sliced
- ¼ cup brown sugar
- ½ tsp cinnamon
- ½ tsp nutmeg
- 1 tbsp cornstarch
- ½ cup pecans (optional)
Instructions
- Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
- Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and bake for 8 minutes. Let cool.
- Beat cream cheese until smooth. Gradually add sugar and vanilla.
- Add eggs one at a time, mixing well after each addition. Stir in sour cream and flour until just combined.
- Pour half of the batter over the crust and layer with half of the peach mixture.
- Add remaining batter and top with remaining peaches and pecans (if using).
- Bake for 50–60 minutes until set; let cool in the oven with the door cracked open for an hour.
- Chill in the refrigerator for at least four hours before serving.
