  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • ½ cup all-purpose flour
  • 2 cups fresh or canned peaches, sliced
  • ¼ cup brown sugar
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • 1 tbsp cornstarch
  • ½ cup pecans (optional)

Instructions

  1. Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and bake for 8 minutes. Let cool.
  3. Beat cream cheese until smooth. Gradually add sugar and vanilla.
  4. Add eggs one at a time, mixing well after each addition. Stir in sour cream and flour until just combined.
  5. Pour half of the batter over the crust and layer with half of the peach mixture.
  6. Add remaining batter and top with remaining peaches and pecans (if using).
  7. Bake for 50–60 minutes until set; let cool in the oven with the door cracked open for an hour.
  8. Chill in the refrigerator for at least four hours before serving.
