Instructions
- Preheat your oven to 375°F (190°C) and prepare a greased muffin tin or line it with paper liners.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, mix the melted butter, milk, and vanilla until well combined.
- Pour the wet ingredients into the dry mixture and stir gently until just combined.
- Fold in the diced peaches carefully.
- In a small bowl, combine brown sugar, oats, and cinnamon for the topping.
- Spoon the batter into the prepared muffin tins about two-thirds full and sprinkle with oat topping.
- Bake for 20-25 minutes until golden brown; check doneness with a toothpick.
- Allow cooling for about 5 minutes before transferring to a wire rack.
