Ingredients
- 1 3/4 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 cup unsalted butter (softened)
- 3/4 cup light brown sugar
- 1/2 cup creamy peanut butter
- 2 large eggs
- 1 1/2 cups mashed overripe bananas
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9" x 5" loaf pan.
- In a bowl, whisk together flour, cinnamon, baking soda, and salt; set aside.
- In another bowl, beat together softened butter, brown sugar, and peanut butter until fluffy. Add eggs one at a time and mix in vanilla.
- Gradually combine the dry mixture with the wet ingredients while alternating with sour cream until just mixed.
- Fold in the mashed bananas and any chopped nuts.
- Pour the batter into the prepared loaf pan and bake for 50-55 minutes until golden brown. Cool before slicing.
