Ingredients
- 1 cup graham cracker crumbs
- 4 tablespoons unsalted butter
- 8 ounces dark chocolate
- 1/3 cup heavy whipping cream
- 1 cup creamy peanut butter
- 8 ounces cream cheese
- 1/3 cup whole milk
- 1 teaspoon vanilla extract
- ¾ cup powdered sugar
- 4 large egg whites
Instructions
- Preheat oven to 350°F and grease a 9-inch pie dish.
- Mix graham cracker crumbs and melted butter; press into the pie dish and bake for 10-12 minutes. Cool completely.
- Melt dark chocolate over simmering water; pour over cooled crust and chill for at least 10 minutes.
- Whip heavy cream until soft peaks form; set aside.
- In a clean bowl, mix peanut butter, cream cheese, milk, and vanilla until smooth; gradually add powdered sugar.
- Fold half the whipped cream into the peanut butter mixture; then fold in remaining cream.
- Spoon filling into the chilled crust and smooth the top; refrigerate for at least 3 hours.
- Prepare meringue by boiling sugar, water, and corn syrup; whip egg whites separately until soft peaks form, then slowly add syrup.
- Spread meringue on top of the pie and torch if desired.
- Serve immediately.
