- 2 and 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- Red gel food coloring
- Coarse sugar or crushed peppermint candies for coating
Instructions
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- Cream softened butter and granulated sugar in a large bowl until light and fluffy. Beat in the egg, vanilla extract, and peppermint extract until combined.
- Gradually add dry ingredients to the wet mixture on low speed until just combined.
- Divide dough in half; color one half with red gel food coloring.
- Chill both halves wrapped in plastic wrap for at least 30 minutes.
- Roll out each dough into rectangles, layer them, roll into a log shape, and chill again for at least 2 hours.
- Preheat oven to 375°F (190°C). Coat the log with coarse sugar or crushed peppermint candies before slicing into rounds.
- Bake cookies for about 8 to 10 minutes until edges are lightly golden.
