- 3 tbsp unsalted butter
- 1 1/4 cups milk
- 2 tsp vanilla extract
- 1 large egg
- 1 cup chopped fresh strawberries
Instructions
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until combined.
- Melt the butter and mix in the milk, vanilla extract, and egg until just combined.
- Fold in the chopped strawberries gently.
- Preheat a non-stick skillet over medium heat and lightly grease if necessary.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on top (about 2-3 minutes), then flip and cook until golden brown (another 2-3 minutes).
- Serve warm with additional strawberries or syrup as desired.
