Instructions
- Heat olive oil in a skillet over medium heat until shimmering.
- Add cubed chicken and cook until browned and fully cooked through.
- Stir in minced garlic and grated ginger; cook for an additional minute.
- Add diced bell pepper and sauté until softened (about 3-4 minutes).
- Mix in drained pineapple chunks and soy sauce; combine well.
- Finally, add cooked rice and mix thoroughly until heated through.
