- 1 cup ice

Instructions
- Rim the cocktail glass with honey and dip it into toasted coconut.
- In the glass, muddle together the mint leaves and lime wedge gently to release oils.
- Fill the glass with ice, then add lime juice, vanilla extract, and pineapple coconut juice. Stir to combine.
- Garnish with extra lime wedges, pineapple slices, and mint before serving.
