Ingredients
- 1/2 cup granulated sugar
- 1/2 cup water
- 1/2 cup packed mint leaves
- 2 cups pineapple juice
- 1 cup lemon juice
- 2 cups water
Instructions
- In a saucepan over medium heat, combine sugar, water, and mint leaves. Bring to a boil while stirring until sugar dissolves. Muddle the mint lightly and simmer for 1 minute. Remove from heat and let steep until room temperature (15-20 minutes).
- In a pitcher, mix together pineapple juice, lemon juice, and 2 cups of water.
- Strain the cooled mint syrup through a sieve into the pitcher to remove mint leaves. Stir in syrup to taste.
- Chill in the refrigerator or serve immediately over ice. Garnish with additional mint and lemon wedges if desired.
