Ingredients
- 240g (2 cups) unbleached all-purpose flour
- 100g (3/4 cup) icing sugar
- 1/2 tsp salt
- 1 tbsp loosely packed, freshly grated, fine grapefruit zest
- 1 tbsp fresh thyme
- 240g (1 cup) cold 1-inch cubed unsalted vegan butter
- 200g (1 ½ cup) icing or powdered sugar (sifted) for glaze
- 60g (¼ cup) freshly squeezed grapefruit juice (strained)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together flour, icing sugar, salt, grapefruit zest, and thyme.
- Add cold vegan butter and blend until crumbly.
- Gather the mixture into a dough ball; add cold water if too crumbly.
- Roll out the dough to about 1/4 inch thick and cut into desired shapes.
- Bake for 30–35 minutes until lightly golden.
- Prepare glaze by mixing sifted icing sugar with grapefruit juice until smooth.
- Cool cookies completely before glazing; garnish as desired.
