  • 200g (1 ½ cup) icing or powdered sugar (sifted) for glaze
  • 60g (¼ cup) freshly squeezed grapefruit juice (strained)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, icing sugar, salt, grapefruit zest, and thyme.
  3. Add cold vegan butter and blend until crumbly.
  4. Gather the mixture into a dough ball; add cold water if too crumbly.
  5. Roll out the dough to about 1/4 inch thick and cut into desired shapes.
  6. Bake for 30–35 minutes until lightly golden.
  7. Prepare glaze by mixing sifted icing sugar with grapefruit juice until smooth.
