- 8 tbsp pistachio cream (plus extra for topping)
- 113 g unsalted butter (½ cup)
- 100 g light brown sugar (½ cup)
- 50 g granulated sugar (¼ cup)
- 1 large egg
- ½ tsp vanilla extract
- 160 g all-purpose flour (1⅓ cups)
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 100 g chocolate (chopped)
- 45 g crushed pistachios
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the unsalted butter, light brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract; mix until well incorporated.
- In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually combine with the wet ingredients on low speed.
- Fold in the chopped chocolate and crushed pistachios until evenly distributed.
- Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for about 12 minutes or until edges are lightly golden. Allow to cool slightly before transferring to a wire rack.
