- 4 large ripe plantains
- 1 lb ground beef
- 2 tsp adobo seasoning
- 1 tbsp sazon
- 1 onion (minced)
- 3 garlic cloves (minced)
- 1 green bell pepper (minced)
- ¼ cup fresh cilantro (chopped)
- ⅓ cup olives or capers
- 1 cup tomato sauce
- 2 cups dairy-free cheese
- 3 large eggs (beaten)
- Coconut oil for frying
Instructions
- Preheat the oven to 356°F (180°C).
- Grease a casserole dish and set aside.
- In a bowl, mix ground beef with sazon and adobo seasoning.
- Heat coconut oil in a skillet; sauté onion, garlic, and bell pepper until soft.
- Add seasoned beef to the skillet and cook until browned.
- Mix in tomato sauce and olives; simmer for 5-10 minutes.
- Prepare plantains by peeling and slicing them lengthwise into strips.
- Fry plantain strips in coconut oil until golden brown on both sides.
- Layer fried plantains at the bottom of the greased dish, brushing with egg wash.
- Add a layer of the meat mixture followed by dairy-free cheese.
- Repeat layers until ingredients are used up, finishing with plantains and cheese on top.
- Bake for about 20 minutes or until golden brown.
