  • 4 large ripe plantains
  • 1 lb ground beef
  • 2 tsp adobo seasoning
  • 1 tbsp sazon
  • 1 onion (minced)
  • 3 garlic cloves (minced)
  • 1 green bell pepper (minced)
  • ¼ cup fresh cilantro (chopped)
  • ⅓ cup olives or capers
  • 1 cup tomato sauce
  • 2 cups dairy-free cheese
  • 3 large eggs (beaten)
  • Coconut oil for frying

Instructions

  1. Preheat the oven to 356°F (180°C).
  2. Grease a casserole dish and set aside.
  3. In a bowl, mix ground beef with sazon and adobo seasoning.
  4. Heat coconut oil in a skillet; sauté onion, garlic, and bell pepper until soft.
  5. Add seasoned beef to the skillet and cook until browned.
  6. Mix in tomato sauce and olives; simmer for 5-10 minutes.
  7. Prepare plantains by peeling and slicing them lengthwise into strips.
  8. Fry plantain strips in coconut oil until golden brown on both sides.
  9. Layer fried plantains at the bottom of the greased dish, brushing with egg wash.
  10. Add a layer of the meat mixture followed by dairy-free cheese.
  11. Repeat layers until ingredients are used up, finishing with plantains and cheese on top.
  12. Bake for about 20 minutes or until golden brown.
