- 1/2 cup pumpkin puree (blotted)
- 1 egg yolk
- 1 tsp pumpkin pie spice
- 2 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1 1/2 cups white chocolate chips
Instructions
- Preheat your oven to 350°F (180°C) and line a cookie sheet with parchment paper.
- Blot the pumpkin puree to remove excess moisture.
- In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Mix in the blotted pumpkin puree, egg yolk, and pumpkin pie spice until combined.
- Gently fold in flour and baking soda until smooth.
- Stir in white chocolate chips evenly throughout the dough.
- Drop dough balls onto the prepared baking sheet, spacing them two inches apart.
- Bake for 9 to 11 minutes until edges are set but centers remain gooey.
- Allow cookies to cool slightly before transferring to wire racks.
