Ingredients
- 1.25 cups Greek yogurt
- 1 oz lemon juice
- 1 tbsp olive oil

- 2 garlic cloves
- 1/2 cup cucumber
- 1 tsp fresh mint
- 10 oz grape tomatoes
- 1/4 cup red onion
- 1/4 cup parsley
- 1 tbsp olive oil
- 1 tbsp red apple vinegar
- 2 garlic cloves
- Pinch of red pepper flakes
- 1.5 cups white rice
- 3 cups chicken broth
- 1.5 tbsp butter
- 1.5 oz lemon juice
- 1 lemon zest
- 1/3 cup parsley
- 2 tbsp olive oil
- 1 lb ground turkey
- 1/2 white onion
- 2 tsp garlic
- 2.5 tsp oregano
- 1 tsp basil
- 1/3 cup sun dried tomatoes
- 1 cucumber
- kalamata olives
Instructions
- Combine all tzatziki ingredients in a mixing bowl and stir until well combined. Refrigerate while preparing other components.
- In a medium saucepan, bring chicken broth to a boil. Add white rice along with lemon juice and zest. Reduce heat, cover, and simmer until rice is tender, about 18 minutes.
- Heat olive oil in a large skillet over medium heat. Add diced onion; cook until softened, about 3 minutes. Stir in garlic, oregano, basil, and red pepper flakes; cook briefly until fragrant.
- Add ground turkey to the skillet and cook until browned and cooked through, breaking up meat as it cooks, about 7–10 minutes.
- Once everything is cooked, fluff the rice with a fork, then layer it in bowls. Top with sautéed turkey mixture followed by grape tomatoes, cucumbers, olives, tzatziki sauce, and fresh herbs.
