  • 1.5 cups white rice
  • 3 cups chicken broth
  • 1.5 tbsp butter
  • 1.5 oz lemon juice
  • 1 lemon zest
  • 1/3 cup parsley
  • 2 tbsp olive oil
  • 1 lb ground turkey
  • 1/2 white onion
  • 2 tsp garlic
  • 2.5 tsp oregano
  • 1 tsp basil
  • 1/3 cup sun dried tomatoes
  • 1 cucumber
  • kalamata olives

Instructions

  1. Combine all tzatziki ingredients in a mixing bowl and stir until well combined. Refrigerate while preparing other components.
  2. In a medium saucepan, bring chicken broth to a boil. Add white rice along with lemon juice and zest. Reduce heat, cover, and simmer until rice is tender, about 18 minutes.
  3. Heat olive oil in a large skillet over medium heat. Add diced onion; cook until softened, about 3 minutes. Stir in garlic, oregano, basil, and red pepper flakes; cook briefly until fragrant.
  4. Add ground turkey to the skillet and cook until browned and cooked through, breaking up meat as it cooks, about 7–10 minutes.
  5. Once everything is cooked, fluff the rice with a fork, then layer it in bowls. Top with sautéed turkey mixture followed by grape tomatoes, cucumbers, olives, tzatziki sauce, and fresh herbs.
