- 3 medium zucchinis
- 1 cup heirloom grape or cherry tomatoes (halved)
- 1 cup packed fresh basil
- 1 clove garlic
- 1/4 cup grated parmesan cheese
- 3 tbsp extra virgin olive oil
- Kosher salt and black pepper to taste
Instructions
- In a food processor, combine basil, garlic, parmesan cheese, salt, and pepper. Pulse until smooth while gradually adding olive oil.
- Use a spiralizer to create noodles from the zucchinis; place them in a work bowl.
- Toss the zucchini noodles with pesto until well-coated, then add halved tomatoes and gently mix.
- Season with additional salt and pepper if desired.
