Ingredients
- 1/4 cup softened butter
- 1/3 cup light corn syrup
- 4 cups powdered sugar (divided)
- 1 1/2 tsp lemon or peppermint extract
- Food coloring (red and blue gel)
- 1/2 cup granulated sugar
Instructions
- In a mixing bowl, combine softened butter and corn syrup using an electric mixer until smooth.
- Gradually add 2 cups of powdered sugar and your choice of extract; mix until well combined.
- Stir in another cup of powdered sugar to thicken the mixture.
- Transfer the mixture to a powdered sugar-dusted cutting board and knead until smooth.
- Divide dough into three portions; tint one red, one blue, and leave one white.
- Roll each portion into small balls (about 3/4 inch) and coat in granulated sugar.
- Flatten each ball into a patty shape using a fork.
- Allow candies to set at room temperature for one day before storing in an airtight container.
