  • 170 grams almond meal
  • 200 grams powdered sugar
  • 70 grams granulated sugar
  • red gel paste food coloring
  • royal blue gel paste food coloring
  • violet gel paste food coloring
  • 6 ounces cream cheese, softened
  • 5 tablespoons unsalted butter, softened
  • 15 fresh cherries, pitted and halved

Instructions

  1. Allow egg whites to reach room temperature.
  2. Process almond meal and powdered sugar until fine; sift.
  3. Beat egg whites with cream of tartar until soft peaks form; gradually add granulated sugar until stiff peaks form.
  4. Divide meringue; tint one half red and the other blue.
  5. Fold in dry ingredients until combined.
  6. Pipe onto parchment-lined sheets and let dry for 45–60 minutes.
  7. Bake at 300°F for 10–15 minutes.
  8. Cool before assembling with cream cheese filling and cherry halves.
