Ingredients
- 120 grams egg whites (about 4 large eggs)
- 170 grams almond meal
- 200 grams powdered sugar
- 70 grams granulated sugar
- red gel paste food coloring
- royal blue gel paste food coloring
- violet gel paste food coloring
- 6 ounces cream cheese, softened
- 5 tablespoons unsalted butter, softened
- 15 fresh cherries, pitted and halved
Instructions
- Allow egg whites to reach room temperature.
- Process almond meal and powdered sugar until fine; sift.
- Beat egg whites with cream of tartar until soft peaks form; gradually add granulated sugar until stiff peaks form.
- Divide meringue; tint one half red and the other blue.
- Fold in dry ingredients until combined.
- Pipe onto parchment-lined sheets and let dry for 45–60 minutes.
- Bake at 300°F for 10–15 minutes.
- Cool before assembling with cream cheese filling and cherry halves.
