- 2 cups ripe tomatoes, chopped
- 1 cup cucumbers, sliced
- 1/2 cup red onion, thinly sliced
- 1 cup bell peppers (mixed colors), chopped
- 1/2 cup crumbled feta cheese
- 1/3 cup Kalamata olives, pitted
- 3 tbsp extra virgin olive oil
- 2 tbsp lemon juice (freshly squeezed)
- 1 tsp dried oregano
Instructions
- 1. Prepare the vegetables: Wash and chop tomatoes into bite-sized pieces; slice cucumbers into half-moons.
- 2. Slice the red onion and bell peppers thinly.
- 3. In a large bowl, combine tomatoes, cucumbers, onions, and bell peppers.
- 4. Add crumbled feta cheese and Kalamata olives on top.
- 5. In a small bowl, whisk together olive oil, lemon juice, and oregano. Pour over the salad and gently toss to combine.
- 6. Serve immediately or chill for a few minutes before enjoying.
