Instructions
- Chop the pineapple into bite-sized pieces and dice the cucumber.
- Thinly slice the red onion and dice the red bell pepper.
- In a large bowl, combine the pineapple, cucumber, onion, and bell pepper.
- Add chopped cilantro and squeeze fresh lime juice over the mixture.
- Season with salt and pepper; toss gently to combine.
- Chill in the fridge for 15 minutes before serving.
