  • 1 pound Italian sausage (sweet or spicy)
  • 1 cup long-grain rice (white or brown)
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 12 medium bell peppers, chopped
  • 1 cup tomato sauce or diced tomatoes
  • 12 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ¼ teaspoon crushed red pepper flakes
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion, garlic, and bell peppers. Slice or crumble the Italian sausage.
  2. Heat olive oil in a large skillet over medium heat. Cook the sausage for about 5–7 minutes until browned. Remove from the skillet and set aside.
  3. In the same skillet, sauté the onion, garlic, and bell peppers for about 4–5 minutes until softened.
  4. Return the sausage to the skillet and stir in rice, diced tomatoes or tomato sauce, chicken broth, basil, oregano, and crushed red pepper flakes. Bring to a simmer.
  5. Cover and cook on low heat for about 20 minutes or until rice is tender and liquid has been absorbed.
  6. Remove from heat and let rest covered for a few minutes before fluffing with a fork. Adjust seasoning with salt and pepper before serving.
