- 1 pound Italian sausage (sweet or spicy)
- 1 cup long-grain rice (white or brown)
- 2 cups chicken broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1–2 medium bell peppers, chopped
- 1 cup tomato sauce or diced tomatoes
- 1–2 tablespoons olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ¼ teaspoon crushed red pepper flakes
- Salt and freshly ground black pepper to taste
Instructions
- Prepare your ingredients by chopping the onion, garlic, and bell peppers. Slice or crumble the Italian sausage.
- Heat olive oil in a large skillet over medium heat. Cook the sausage for about 5–7 minutes until browned. Remove from the skillet and set aside.
- In the same skillet, sauté the onion, garlic, and bell peppers for about 4–5 minutes until softened.
- Return the sausage to the skillet and stir in rice, diced tomatoes or tomato sauce, chicken broth, basil, oregano, and crushed red pepper flakes. Bring to a simmer.
- Cover and cook on low heat for about 20 minutes or until rice is tender and liquid has been absorbed.
- Remove from heat and let rest covered for a few minutes before fluffing with a fork. Adjust seasoning with salt and pepper before serving.
