Ingredients
- 2 cups cherries (halved, pitted)
- 1 1/3 cups granulated sugar
- 2 large eggs
- 5 tablespoons unsalted butter (melted)
- 1/3 cup canola or vegetable oil
- 3/4 cup all-purpose flour
- 3/4 cup Dutch process cocoa powder
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper, spread halved cherries on it, sprinkle with sugar, and roast for about 10 minutes. Allow cooling.
- Lower the oven temperature to 325°F. Prepare an 8X8 inch baking pan by spraying it with non-stick spray and lining it with parchment paper.
- In a mixing bowl, sift together flour, cocoa powder, cornstarch, and salt; set aside.
- Use an electric mixer to beat sugar and eggs on high until light and fluffy; add melted butter, oil, and vanilla extract while mixing on low until combined.
- Fold dry ingredients into the wet mixture gently using a rubber spatula.
- Add half of the roasted cherries and chocolate chips to the batter; pour into prepared pan.
- Bake for about 40-50 minutes until edges are set but center is slightly underbaked; cool completely before cutting.
