  • 1 ball burrata cheese
  • 12 grape tomatoes, halved
  • 2 tablespoons fresh parsley, finely chopped for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. For the roasted tomatoes: Place halved grape tomatoes cut side up on a baking sheet. Drizzle with olive oil, salt, and pepper. Roast for 20–30 minutes until soft and slightly caramelized.
  3. For the crostini: Slice the baguette into 12 half-inch slices. Brush both sides with olive oil and arrange on a baking sheet. Bake for about 10 minutes until golden brown, flipping halfway through. Rub warm crostini with raw garlic for flavor.
  4. Assemble: Spread about 1 tablespoon of burrata on each crostini, top with 1–2 teaspoons of pesto, and add 2 roasted tomato halves per piece. Garnish with salt and serve immediately.
