  • 1 whole fish (gutted & cleaned)
  • ½ thumb-sized ginger
  • 3 garlic cloves
  • 1 medium bell pepper (cut into 2” cubes)
  • 2 sprigs parsley (chopped)
  • 1 small onion (thinly sliced)
  • 2 sprigs green onion (cut into 2” slices)
  • 1 cup olive oil
  • 2 tsp Knorr seasoning
  • 1 tbsp paprika
  • ½ tsp black pepper
  • 1 tsp oregano
  • 1 tsp salt
  • For garnish: 2 tablespoons fresh parsley (finely chopped)

Instructions

  1. In a food processor, blend ginger, bell pepper, parsley, green onion, and onion until smooth.
  2. Mix the puree with olive oil in a bowl.
  3. Add Knorr seasoning, paprika, black pepper, oregano, and salt; stir until combined.
  4. Pat the fish dry and make diagonal slits on both sides.
  5. Rub marinade onto the fish thoroughly and refrigerate for at least an hour.
  6. Preheat oven to 400°F about 10 minutes before cooking.
  7. Apply more marinade to the fish and spray oil on top before placing it in the oven.
  8. Broil or grill for a total of about 20–30 minutes until cooked through; baste with remaining marinade during cooking.
  9. Serve hot with onion wedges and lemon slices.
