Ingredients
- 1 whole fish (gutted & cleaned)
- ½ thumb-sized ginger
- 3 garlic cloves
- 1 medium bell pepper (cut into 2” cubes)
- 2 sprigs parsley (chopped)
- 1 small onion (thinly sliced)
- 2 sprigs green onion (cut into 2” slices)
- 1 cup olive oil
- 2 tsp Knorr seasoning
- 1 tbsp paprika
- ½ tsp black pepper
- 1 tsp oregano
- 1 tsp salt
- For garnish: 2 tablespoons fresh parsley (finely chopped)
Instructions
- In a food processor, blend ginger, bell pepper, parsley, green onion, and onion until smooth.
- Mix the puree with olive oil in a bowl.
- Add Knorr seasoning, paprika, black pepper, oregano, and salt; stir until combined.
- Pat the fish dry and make diagonal slits on both sides.
- Rub marinade onto the fish thoroughly and refrigerate for at least an hour.
- Preheat oven to 400°F about 10 minutes before cooking.
- Apply more marinade to the fish and spray oil on top before placing it in the oven.
- Broil or grill for a total of about 20–30 minutes until cooked through; baste with remaining marinade during cooking.
- Serve hot with onion wedges and lemon slices.
