Instructions
- Wash the fennel under cool running water, slice off the fronds, and remove any tough outer layers. Cut the bulb in half and slice into thin half-moons.
- Core the apple and slice it into wedges.
- In a mixing bowl, combine sliced fennel, apple wedges, dried cranberries, and pumpkin seeds; toss gently.
- In a small bowl, whisk together lemon juice and whole red peppercorns.
- Drizzle dressing over the salad mixture and toss again lightly to coat.
