Ingredients
- 2 lbs Yukon Gold potatoes, thinly sliced
- 3 large sweet onions, sliced
- 4 tbsp unsalted butter
- 2 cups low-sodium beef broth
- 2 tsp fresh thyme, chopped
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 ½ cups Gruyère cheese, shredded
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- In a skillet over medium heat, melt the butter and sauté the sliced onions until golden brown.
- Add minced garlic and thyme to the onions; cook until fragrant.
- Layer half of the sliced potatoes in the baking dish followed by half of the onion mixture. Repeat with remaining potatoes and onions.
- Pour beef broth evenly over the layers and top with shredded Gruyère cheese.
- Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
- Allow to rest for about 10 minutes before serving.
