  • 1 cup pineapple, cut into cubes
  • 2 cups chicken broth
  • 1 cup jasmine rice
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • ¼ cup green onions, sliced
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tbsp sesame seeds
  • 1 tsp ginger, grated
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and add olive oil. Sear the chicken until golden-brown (about 6–7 minutes). Remove from skillet and keep warm.
  2. In the same skillet, sauté onion, garlic, and bell pepper until softened. Add pineapple and caramelize for 2–3 minutes.
  3. Stir in jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover the skillet, and let simmer for 15–18 minutes until rice is tender.
  5. Fold the reserved chicken back into the mixture and garnish with green onions and sesame seeds before serving.
