- 12 oz chicken sausage, sliced
- 1 lb baby potatoes, halved
- 1 cup bell peppers, chopped (mixed colors)
- 1 medium yellow onion, diced

- Salt and pepper to taste
Instructions
- Thoroughly wash and halve the baby potatoes for even cooking.
- Heat olive oil in a large skillet over medium heat. Add potatoes cut-side down; cook for about 5 minutes until browned.
- Add sliced chicken sausage to the skillet and cook until browned (about 5 minutes).
- Stir in chopped bell peppers, diced onion, and minced garlic; cook until softened (4-5 minutes).
- Season with oregano, salt, and pepper; stir to combine.
- Cook until everything is golden brown (approximately 15 minutes total). Serve hot.
