Ingredients
- 1 1/2–2 lbs top sirloin steak
- 1 lb baby red potatoes
- 2 bell peppers (any color)
- 1 large red onion
- 2 small or 1 large zucchini
- extra virgin olive oil
- salt and pepper
Instructions
- Prepare the marinade by whisking together all marinade ingredients in a bowl or freezer bag. Reserve 1/3 cup for basting.
- Add steak to remaining marinade, ensuring it's well coated. Marinate in the refrigerator for at least 2 hours (up to overnight).
- Pre-cook potato chunks in a microwave-safe bowl with water for 4-5 minutes until fork-tender.
- Toss prepped veggies (bell peppers, onions, zucchini) with reserved marinade and seasonings; refrigerate.
- Soak wooden skewers in water if using, then assemble kabobs by threading marinated steak and vegetables onto skewers.
- Grill or bake until the meat reaches desired doneness.
