- 2 lbs ground beef
- 1 red bell pepper, finely chopped
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- ¾ cup Italian style breadcrumbs
- ½ cup grated parmesan cheese
- 2 eggs
- About ¼ lb deli chicken
- 12–15 large fresh basil leaves
- 1 ¼ cup shredded mozzarella cheese
Instructions
- Preheat your oven to 350°F.
- Sauté onion and red bell pepper in olive oil until softened; add garlic and cool slightly.
- In a large bowl, combine ground beef, breadcrumbs, parmesan cheese, eggs, tomato paste, seasonings, parsley, and cooled veggies.
- Shape the mixture into a rectangle on parchment paper and layer with chicken, basil leaves, and mozzarella.
- Roll it up tightly using the parchment paper as a guide and seal the ends.
- Bake for about 1 hour on a parchment-lined baking sheet; let rest for 10 minutes before slicing.
