  • 1 red bell pepper, finely chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • ¾ cup Italian style breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 eggs
  • About ¼ lb deli chicken
  • 1215 large fresh basil leaves
  • 1 ¼ cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 350°F.
  2. Sauté onion and red bell pepper in olive oil until softened; add garlic and cool slightly.
  3. In a large bowl, combine ground beef, breadcrumbs, parmesan cheese, eggs, tomato paste, seasonings, parsley, and cooled veggies.
  4. Shape the mixture into a rectangle on parchment paper and layer with chicken, basil leaves, and mozzarella.
  5. Roll it up tightly using the parchment paper as a guide and seal the ends.
  6. Bake for about 1 hour on a parchment-lined baking sheet; let rest for 10 minutes before slicing.
