- 2 medium zucchini
- 1 tablespoon olive oil

Instructions
- Preheat your grill to medium heat. Lightly oil the grates.
- Trim both ends off each zucchini and slice them diagonally into ½-inch thick planks.
- In a mixing bowl, drizzle the sliced zucchini with olive oil and toss to coat evenly. Sprinkle with garlic powder, salt, and pepper.
- Grill the zucchini slices for about 5–6 minutes on each side until nicely seared and tender but still firm.
- Remove from the grill and garnish with chopped parsley before serving.
