- 2 lbs beef chuck, cut into 1-inch cubes
- 1 tbsp coconut oil
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp curry powder
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) full-fat coconut milk
- Salt and pepper to taste
Instructions
- Prepare all ingredients: chop onions, mince garlic, grate ginger, and cut beef.
- In a large skillet over medium heat, melt the coconut oil. Add onions and sauté until translucent.
- Stir in garlic and ginger; cook for another minute until fragrant.
- Add curry powder directly to the skillet and stir well.
- Transfer the mixture to the slow cooker along with diced tomatoes and coconut milk; season with salt and pepper.
- Place beef cubes into the slow cooker ensuring they are submerged in the sauce.
- Cover and cook on low for 6-8 hours or high for 4-5 hours until beef is tender.
- Serve hot over rice or with crispy fries.
