Ingredients
- 1 pound dried red beans
- 2 links smoked sausage (sliced)
- 1 yellow onion (diced)
- 1 rib celery (diced)
- 4 cloves garlic (minced)
- 3 bay leaves
- 6 cups water
- 2 beef bouillon cubes
- 1 tablespoon Cajun seasoning
Instructions
- Rinse the dried red beans under cold water. Chop the vegetables and slice the smoked sausage.
- In a slow cooker, combine all ingredients: red beans, smoked sausage, diced onion, celery, minced garlic, bay leaves, water, beef bouillon cubes, and Cajun seasoning.
- Stir well to combine. Cover and cook on high for about 6 hours until beans are tender.
- For a creamier texture, mash some beans against the side of the pot before serving.
- Serve over steamed rice for an irresistible meal.
