- 1 pound ground beef
- 3 carrots, chopped
- 2 celery stalks, chopped
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons tomato paste
- 4 cups beef broth
- 3/4 cup small pasta (like ditalini)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat; transfer it to the slow cooker.
- Add chopped carrots, celery, onion, and minced garlic into the slow cooker with the beef.
- Stir in diced tomatoes (with juices), tomato paste, beef broth, and Italian seasoning. Season with salt and pepper.
- Cover and slow cook on low for 6–7 hours or high for 3–4 hours.
- About 30 minutes before serving, stir in the pasta and continue cooking until tender.
- Serve warm, garnished with fresh parsley and Parmesan if desired.
