- 1 pound baby potatoes (such as red or Yukon Gold)
- 4 tablespoons melted butter
- 1 ½ teaspoons minced garlic
- ½ teaspoon Italian seasoning
- ¼ cup finely grated parmesan cheese
- Salt and pepper to taste
- 2 tablespoons chopped parsley
Instructions
- Boil the baby potatoes in salted water for 18-22 minutes until tender.
- Preheat your oven to 425°F (220°C).
- Coat a sheet pan with cooking spray. Once boiled, drain potatoes and transfer them in a single layer.
- Smash each potato gently to about half an inch thick using a potato masher or glass.
- In a bowl, mix melted butter, minced garlic, Italian seasoning, salt, and pepper.
- Drizzle the butter mixture over the smashed potatoes evenly.
- Sprinkle parmesan cheese on each potato and bake for 20-25 minutes until golden brown and crispy.
- Garnish with chopped parsley before serving warm.
