Instructions
- Preheat your oven to 350°F (175°C) and line an 8.5 x 4.5-inch loaf pan with parchment paper.
- In a bowl, combine flour, graham cracker crumbs, baking powder, baking soda, and salt.
- In a stand mixer, beat softened butter and brown sugar until light and fluffy.
- Add honey, eggs, vanilla extract, and sour cream, mixing until combined.
- Gradually add the dry mixture to the wet ingredients; stir until just combined.
- Fold in chocolate chips and vegan marshmallows gently before pouring the batter into the prepared pan.
- Bake for 50-60 minutes until a toothpick inserted comes out clean with a few moist crumbs.
- Cool completely in the pan before slicing.
