- ¾ cup unsalted butter

- 3 tbsp brown sugar (for filling)

Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, melt the unsalted butter until golden brown and let it cool slightly. Mix in granulated and brown sugars until well combined.
- Beat in eggs one at a time, followed by vanilla extract.
- In a separate bowl, whisk together flour, baking powder, cornstarch, pumpkin pie spice, and salt. Gradually add to the wet mixture until fully incorporated.
- For the apple filling, melt butter in a saucepan over medium heat. Add diced apples, granulated sugar, brown sugar, ground cinnamon, and cornstarch; cook until apples are tender.
- Gently fold the apple mixture into the cookie dough.
- Drop spoonfuls of dough onto parchment-lined baking sheets and bake for about 10 minutes or until edges are lightly golden.
- Allow cookies to cool slightly on the baking sheet before transferring to wire racks.
